- ¼ cup Bonnie’s Jams Raspberry Lime Rickey preserves
- Juice of half a lime
- ¼ tsp. fresh lime zest
- 2 oz. Vodka
- Sparkling water or champagne
- Lime wedge for garnish
In small bowl, combine Raspberry Lime Rickey preserves, lime juice and zest. Mix and let sit for 10 to 15 minutes. Using fine mesh strainer, strain mixture, using back of wooden spoon to press through liquids.
Fill cocktail shaker with ice, pour in the syrup, add in vodka and shake. Pour mixture into glass and top with sparkling water or champagne. Garnish with lime wedge.
